    Meatless meals aren’t just for the home anymore. Vegetarian meals are making a big splash at schools across the nation these days, and that’s no surprise. As we mentioned previously, recent research by the Centers for Disease Control and Prevention says that 367,000 children across the U.S. opt for meatless meal options at the dining table. Others have since argued that this number is probably dramatically understated because of limitations in the CDC’s methodology.

    The latest government statistics on complementary and alternative medicine suggest that 1 in 200 U.S. children have followed vegetarian diets at least briefly in the past year. However, the questions ask only about vegetarianism motivated by health, while some research indicates that children are most likely to become vegetarian for ethical reasons. The same government study found that 1.5% of adults had followed a vegetarian diet at some point during the past year, also for health reasons.
